Raita is the most important part of our Indian meal. A side dish which completes our meal or we can say that an accompaniment which gives the best company to our food in terms of taste as well as nutrition also.

 

Mix Veg Raita as the name indicates raita made with different vegetables. Here, we are using those vegetables which we can easily eat in raw form like cucumber, tomato, onion, etc. You can also opt for grated carrots and beetroots. To make this Raita is quite easy and simple to make, just take a chilled whisk curd and mix vegetables along with some raita spices.

 

In my childhood days, I never had this raita at my home. Once I visited my aunt’s (mausi) home during my school time. There I had Mix Veg Raita for the first time and I was very much fond of that. From that time, this raita holds a very special place in my cuisine. Most people include curd and raita in their diet during the summer season but it is not true in my case, I with my family have raitas and curd throughout the year.

 

This veg raita is special in many ways like it is made with those ingredients which are easily available in our Kitchen throughout the year. We can also be termed this as Healthy Veg Raita.

 

DO YOU KNOW THE EXACT REASON BEHIND SERVING RAITA?

Raita is made with all the cooling ingredients like curd, coriander, veggies, fruits, etc and it helps to control the heat in our body which is generated by the heavy meal. Also, this helps in digesting the spicy food easily.

Though this raita is very easy to make yet I want to share some important points:

Firstly, there are no particular amount of any veggies, you can add or skip any vegetable as per your requirement. It is recommended to grate those vegetables which are hard like carrots and beetroots.

 

Secondly, raitas taste best when serve chilled so rather than keeping raita in the refrigerator, take chilled curd to make raita.

 

Thirdly, Use thick and fresh curd. Thick curd will coat all the vegetables and give an attractive creamy texture. We can refer to this raita as a salad and kids will definitely grab it because of its attractive colors and presentation.

 

Last but not least, this is the best way to use leftover vegetables.

 

Special Note: You can also prepare it during fast days, simply skip the vegetables and spices which you avoid during your fast. This will provide you energy for the full day. The goodness of vegetables and nutritious curd will be a tummy-filling meal.

This raita goes well with roti and sabzi. Also, it doubles the taste of Biryani, Pulao, or any kind of Restaurant style meal along with pickle and papad. You can also serve this raita for the get-togethers and on any kind of gatherings.

Step by step instructions

  • Take 1 cup of fresh curd. Whisk it well.

Add 1/2 tsp of salt to it. Followed by  black salt, and cumin powder.

  • Time to add vegetables, onion, tomatoes, cucumber. You can also add grated carrots.

  •  Add finely chopped green chillies and coriander leaves.
  • Mix all the things nicely. Mix Veg Raita is ready to serve.

Ingredients
  

  • 100 gm fresh curd beaten
  • 1/2 cucumber finely chopped
  • 1 medium onion finely chopped
  • 1 medium tomato finely chopped
  • 1/2 tsp salt
  • 1/2 tsp black salt
  • 1/4 tsp cumin powder
  • 1/2 tsp red chili powder
  • coriander leaves
  • 1 green chili

Instructions
 

  • Take 1 cup of fresh curd.
  • Whisk it well.
  • Add 1/2 tsp of salt in it. Followed by red chili powder, black salt and cumin powder.
  • Time to add vegetables- onion, tomato and cucumber. You can also add grated carrot.
  • Add finely chopped green chili and coriander leaves.
  • Mix all the things nicely.
  • Mix Veg Raita is ready to serve.

Notes

• Use fresh curd.
• You can skip any veggies if you want.
