Instructions
Take a pan and add all the whole spices like cumin seeds, fennel seeds, fenugreek seeds and cinnamon stick.
Followed by Kashmiri red chili powder, small cardamoms and cloves. Turn on the flame and roast the spices for 3 minutes.
After 3 minutes, off the flame and transfer the spices to a mixing jar and allow to coll down slightly.
Blend the spices to make powder. Transfer into a bowl.
To this, add powdered spices like coriander powder, black pepper powder and turmeric powder.
Followed by dry mango powder and Kashmiri red chili powder.
Also, salt, ginger powder and sugar powder.
Mix well.
Store in an dry air-tight container. Masala-e-Magic is ready to sprinkle on dishes.
Notes
• Do not over roast the whole spices.
• Measurement should be accurate for the best results.
