Veg cutlets are the best tea time snack and taste good when served hot with either tomato ketchup or green chutney.
Depending upon the taste of diet you can either deep fry or bake these veg cutlets but I prefer to do shallow fry and believe me there is no change in taste. Similarly, if you want to avoid the use of potatoes, replace it with sweet potato or raw bananas.
There are much variety of cutlets you can make like Paneer Cutlets, Veg Cutlets, Corn Cutlets, etc by which you can make your kids evening full of health and happiness.
Furthermore, select any vegetable of your choice, the only condition is you have to finely chop the vegetables. Here I am using capsicum and french beans only. You can opt for beetroot, broccoli, cauliflower, carrot, and even leafy vegetables.
This dish attracts your children and they happily clean the plate within a few minutes because of its unique and crispy taste of vegetables. Here, I saute vegetables rather than frying that’s why I mentioned above that vegetables should be finely chopped. I am also adding some paneer to make it more healthy.
For the binding, I am using roasted gram flour instead of bread crumbs or cornflour. You can also choose rice flour as an option for binding. Gram flour makes veg cutlets healthier as a comparison with bread crumbs and cornflour.
Interesting point is that you can use these cutlets as patties for a veg sandwich or for a burger. If you get bored from fritters then this will be a great replacement during monsoon as an evening snack.
Lastly,all about the shape is you can give any shape, totally based on personal preference, I gave cylindrical shape to my cutlets. The reason behind this is I am shallow frying them. If you give them a round shape then it will be recommended to deep fry them then only they get a beautiful texture.

Step by step instructions
- Finely chopped the vegetables.
Take a pan and saute vegetables on medium-high flame for 2-3 minutes.
Take out vegetables on a plate and let it cool down.
Take a bowl and add mashed potatoes to it.
Now, add grated paneer.
- Add all the dry ingredients( salt, chaat masala, dry mango powder, red chili powder, coriander leaves, and Kasuri methi)
Add vegetables and roasted gram flour.
Mix all the things well either with your palm or spatula and make a dough.
Grease your palm with oil and start making cutlets. You can give any shape.
Likewise, prepare all the cutlets.
- Heat a pan and drizzle oil on it.
Put a batch of cutlets on it and fry on the medium-high flame from all sides until golden brown.
Once done, take out on kitchen towel.
Veg cutlets are ready to serve with tomato ketchup or green chutney.

Veg Cutlets/ Kebabs
Ingredients
- 1 Capsicum
- 10-12 number french beans
- 2 medium boiled potato mashed
- salt to taste
- 1 tbsp Chat masaa
- 2 tbsp kasturi methi
- 2 tbsp Roasted gram flour(Besan)
- 1 tbsp red chili powder
- handful Corainder leaves chopped
- 1 tbsp Dry mango powder
- Oil for frying
Instructions
- Heat a pan, add littleoil to it and add capsicum, beans to it.
- Saute it on med-highflame for 2 minutes.
- Take it out in a plate& cool it down.
Dough for cutlets
- In a mixing bowl, add boiled potatoes.
- Add grated paneer.
- Add chaat masala, salt,coriander leaves, red chili powder, dry mango powder, and Kasuri methi
- Add vegetables androasted gram flour.
- With the help of yourpalm, mix all the things well and make a dough.
Making Cutlets
- Grease your palm with oil and take out aportion from the dough and give it a shape of your choice.
- Likewise, prepare all thecutlets.
Frying cutlets
- Heat a pan and drizzle oil on it.
- Once heated, add cutletson it as per the suitable numbers.
- Shallow fry on themedium-high flame from all the sides until golden brown.
- Once done, take out onkitchen towel.
- Serve in an evening snackwith tea and sauce of your choice. You can also serve it in parties.
Notes
- Make sure vegetables must be finely chopped. You can take any vegetables of your own choice.
- You can also deep fry kebabs but I personally prefer to shallow fry.
- Make sure you fry kebabs on high flame as all the things are already cooked, we just need to give texture to it.
- Avoid boiling vegetables as it will degrade the taste and there will be a lot of water in the mixture.
- For binding, prefer roasted gram flour only. Corn flour or maida will make the binding tasteless from inside.
