Sweet Potato Pancakes: Healthy Pancakes: Sweet Potatoes are considered to be one of the best food for the toddlers.

Sweet Potato Pancakes are easy, tasty and healthy food for little ones. All the ingredients used in this are easily available at your home, so you can make it any time. Sweet Potatoes are very healthy for all aged people.  Sweet Potatoes contains a high amount of fiber, vitamins, minerals, carbohydrates, etc. It is loaded with several amazing properties like:

  • contains anti-inflammatory activities.
  • helps to manage diabetes
  • reduce stress level
  • good for digestion
  • nourishes hair and skin
  • manages blood pressure and many more.

Talking about the recipe in detail, here I used boiled sweet potato, suggesting you to use medium-sized sweet potatoes which can easily get boiled in any utensil. If you use too small size then it absorbs lot of water and too big sized sweet potatoes take much time to boil

As a sweetening agent, I used jaggery here which is again a very good option for us during winter as it helps to keep the body warm as well as acts a detox that cleanses the liver. Moving next, here I used milk to make batter but you can opt ration of 50-50 of milk and water. To enhance flavors, I added a pinch of cardamom powder and little amount of grated coconut which is optional to use. So, I an easily say if you are searching for some good food recipe for your little ones then you must try this.

Moving forward, I would like to add a few tips to this: firstly, do not make the batter too thin. Secondly, for the perfect fluffy texture beat it in one direction for about 2 minutes. Last but not least Serve hot this lip smacking pancakes with honey or chocolate syrup as a dressing agent.

Step by step instructions

  • Take a bowl, add boiled sweet potato in it. Mash it properly.
  • Add powdered jaggery to this. Mix it.

  • To this, add wheat flour.

  • Followed by milk.

  • Mix this well and form the lump-free batter. After 10 minutes, mix well. If required add water to adjust consistency.

  • Add 1 tsp of cardamom powder to this.
  • Followed by 2 tbsp of grated dry coconut. Mix well.

  • Heat a pan, spread ghee on it.

  • Take a little portion of batter and spread evenly on the pan. Not too thin.

  • Cover and cook on medium-high heat for 2 minutes.
  • Flip the pancake and cook on the other side for 2 minutes.
  • Transfer pancake on the plate. Likewise, prepare all the pancakes.

  • Garnish with chocolate syrup and honey.

  • Sweet Potato Pancakes are ready.
