Tomato Chutney- South Indian Style

Chutney is a basic accompaniment with almost every meal. It enhances the texture of the food as well as the flavors of the food.
Today I am sharing the recipe of Tomato chutney which gets prepared in 15- 20 minutes and you can enjoy with any south Indian meal whether it is rice or any roti kind stuff.
There are a lot many ways to prepare the tomato chutney but I am sharing South Indian style recipe which we generally have when we go out for any south Indian restaurants.
This chutney is the combination of many ingredients but the important one is Tomato as the name indicates. Every ingredient has its specialty and reason for adding it. Like, Whole Red chili added here for good color. This is Kashmiri Whole Red chili which has more of good color and less of spicy flavor.
Garlic and onion here give the thick texture and balances the tangy flavor of tomatoes. Green chilies are used to enhance the spiciness.
Since it is quite easy to make yet needs to follow some steps for the perfect result:
Do not overcook any ingredient otherwise it degrades the taste of chutney. Secondly, it is suggested to use good quality of tomatoes(more in red color) which gives the best result.
Step by step instructions
Preparing Chutney
- Heat a pan, add 2 tbsp of oil in it. Do not overheat the oil.
Add 2-3 whole red chilies in it.
Add garlic cloves and green chilies to it. Saute on a medium flame for 1 minute. Do not overcook the garlic cloves.
Add sliced onion to it. Cook for 2-3 minutes on medium flame or till the onion becomes translucent.
As the onion changes color, add roughly chopped tomatoes followed by salt as per your taste.
- Mix well and cook this mixture for 10 minutes on low flame or till the tomatoes cooked well.
The mixture is ready. Turn off the flame and allow it to cool down.
- Transfer the mixture in the mixing jar and without adding water blend it to make smooth chutney.
Transfer the chutney in a bowl.
Preparing Tempering
- Heat a tempering pan. Add 1 tbsp of oil in it.
- As the oil heats well, add 1 tsp of mustard seeds.
Followed by 8-10 curry leaves. At this stage turn off the flame and allow the curry leaves to cook a little.
Pour the mixture on the chutney.
Tomato Chutney is ready to serve.

Tomato Chutney- South Indian Style
Ingredients
- 1 medium-sized onion (sliced)
- 5-6 no garlic cloves
- 2-3 no green chilies
- 2 medium-sized tomatoes(roughly chopped)
- 2-3 no whole red chili
- salt to taste
- 2 tbsp oil for tempering
- 1 tbsp oil
- 1 tbsp mustard seeds
- 8-10 no fresh curry leaves
Instructions

Notes
- Adjust the consistency as per your choice.
- You can add/ eliminate green chilies according to your taste.
- Do not overcook any ingredient.
- You can double/ triple the number of ingredients as per the number of people.
- Serve it with dosa, idli, uttapam or any south Indian dish of your choice.
