There are many ways of making your diet healthy with some uniqueness and here it is –Palak Patta Chat. weekend & winters, kids don’t want to have lunch especially on weekends and with the name of vegetables, they ran miles away so here we are presenting a dish which is so colorful, delicious lip-smacking if once your kids taste it, they will clean out the full plate.
We are very much aware of the benefits of Spinach as it is loaded with tons of nutrients. It also provides iron, proteins, vitamins, and minerals. It also improves blood glucose control in people with diabetes, also lowering the risk of cancer, and improving bone health.
To make Spinach Fritters crunchy and crispy, each spinach leaf coated with gram flour and then deep-fried. These leaves will provide the base to the chaat like other chaat recipes where we provide a base of papad and mathri.
Normally, we use tamarind sweet chutney and green chutney for any chaat recipe but I am making this snack in a different way so I am using only green (coriander) chutney. Why so? Because what happened is, Relatives are about to reach my home and they informed just 20 minutes before and I had to prepare something delicious and unique for them.
In that short period of time, I simply made spinach fritters and topped with some basic chaat ingredients like onion, tomato, sev, and with ketchup. Believe me, it turns out delicious. So this advice for all those people who ran with lack of time, you can easily replace sweet chutney with tomato ketchup.
Lastly, some tips for the recipe: The important one is about the fritters, try to assemble and serve the chaat as soon as the fritters made otherwise they will turn soggy and chaat will not be crispy. If it becomes soggy, put fritters in preheated oven for a while and serve. Use fresh spinach leaves for fritters. You can add as many chaat ingredients to make it tastes best. You can make it dry and skip adding curd also. Adding rice flour enhances the crunchy flavor of fritters but you can replace it with cornflour. Chat ingredients totally depend on you. You can add or eliminate any ingredients as per your choice.
If you want to make these spinach fritters some hours before then half fry them and when you want to serve, just fry for 30 seconds on high flame. This will help to prevent sogginess from fritters.

Step by step instructions
Preparing Spinach Fritters
- Take a mixing bowl, add besan salt along with rice flour to it.
Add carom seeds. asafoetida followed by turmeric powder, red chili powder, and salt. Mix the dry ingredients properly first.
Add water gradually and make a smooth batter.
Take a fresh medium to big sized spinach leaves. Discard the thick stems. Wash them properly and dried them.
Dip the spinach leaves into the batter and deep fry it in hot oil on medium flame. Once it starts floating, turn it and cook on the other side as well until golden brown.
Assembling Chat
- Arrange all the fried spinach leaves on a circle-shaped serving plate.
Start spreading all the chat ingredients whatever you have. Here, I am starting with finely chopped onion and tomatoes followed by boiled potatoes and roasted peanuts.
In spices, sprinkle cumin powder, chat masala and dry mango powder.
Next for some, sweet flavor, add sweet whisked curd followed by coriander chutney for some spicy flavors.
- Adding a few more garnishing ingredients like chopped coriander leaves.
Along with bhujiya namkeen.
Last but not least, add pomegranate seeds.
Palak Patta Chat is ready to serve.

Ingredients
- 15-16 number Spinach leaves (Palak) washed & dried
- 1 cup Gram Flour
- 3 tbsp rice flour
- 1/2 tbsp ajwain
- a pinch asafoetida(heeng)
- 1/4 tbsp turmeric powder
- 1/2 tbsp red chilli powder
- Salt to taste
- Water as required

For Chat
- 1 cup Chopped onion
- 1 cup Chopped tomatoes
- 1/2 cup Boiled potatoes
- 1/4 cup Roasted peanuts
- 1/2 cup Green(Coriander) Chutney
- 1 tbsp Chat Masala
- 1 tbsp cumin powder
- 1 tbsp dry mango powder
- Handful Chopped coriander
- 1 tbsp Namkeen sev
- 1/4 cup sweet curd
- pomegranate seeds as required

Notes
- Do not make the batter too thin otherwise, it will not stick to spinach leaves.
- Add water gradually to gram flour to make it lump free.
- Take large spinach leaves as it helps to take chat in it and eat easily.
- You can add or remove any ingredients from the chat as per your choice.
